Smoked trout and macadamia spread

Macadamias are used as a base for this simple and delicious spread. It can be whipped up in minutes, stores well in the fridge, and is also a great portable offering. 
250 g

120g piece smoked trout, skin removed

¼ cup macadamias

2 tablespoons lemon juice, or to taste

Place all ingredients in the bowl of a food processor and process to combine. Season to taste with salt and black pepper and extra lemon juice if desired. Store in the refrigerator in an airtight container.
Serve in a small bowl with fresh or toasted bread and pickled cucumbers.
