Baked pears with macadamias in orange and ginger syrup

Ingredients
  

  • 4 pears
  • 2 tbsp white sugar
  • 2 cups brown sugar
  • 2 cups water
  • 6 slices ginger peeled, fresh
  • 1 stick cinnamon
  • 2 pinches ground cardamom
  • 1 cup orange juice
  • 1 cup yoghurt good quality thick
  • 60g (½ cup) macadamias raw, coarsely chopped

Instructions
 

  • Preheat oven to 200°C.
  • Peel the pears, cut into quarters and remove the core.  Transfer to a baking dish.
  • Combine the white sugar, brown sugar, water, ginger, cinnamon and cardamom in a saucepan, stir over low heat until the sugar has dissolved. Bring to the boil and cook for 3 minutes. Add the orange juice and bring again to the boil. Pour over the pears.
  • Bake for 30 minutes or until the pears are tender, stirring occasionally. Serve warm or cold with the yoghurt and sprinkled with macadamias.
