Ingredients
- 4 pears
- 2 tbsp white sugar
- 2 cups brown sugar
- 2 cups water
- 6 slices ginger peeled, fresh
- 1 stick cinnamon
- 2 pinches ground cardamom
- 1 cup orange juice
- 1 cup yoghurt good quality thick
- 60g (½ cup) macadamias raw, coarsely chopped
Instructions
- Preheat oven to 200°C.
- Peel the pears, cut into quarters and remove the core. Transfer to a baking dish.
- Combine the white sugar, brown sugar, water, ginger, cinnamon and cardamom in a saucepan, stir over low heat until the sugar has dissolved. Bring to the boil and cook for 3 minutes. Add the orange juice and bring again to the boil. Pour over the pears.
- Bake for 30 minutes or until the pears are tender, stirring occasionally. Serve warm or cold with the yoghurt and sprinkled with macadamias.
