Create the ultimate Father’s Day lunch

A macadamia-inspired feast dad and the entire family will love. 

Father’s Day is a special occasion, a time for gathering together and celebrating the important role dad plays in your family. We know how much dads love macadamias, so we’ve put together the ultimate Father’s Day lunch menu, featuring some of our most popular recipes. Follow our plan and create the entire menu, or just pick one or two – many of the dishes can be prepared well in advance. Dad is sure to love his magnificent macadamia-inspired lunch (and you’ll look like a hero in the kitchen).

To start

For something to put out on the table while everyone gathers, these three delicious dips– macadamia pesto, macadamia hummus and macadamia tapenade – are easy to make, healthy and sure to whet the appetite. Serve the dips with crackers, vegetable sticks or pita bread.

Entree

With the dips out, it’s time to fire up the grill. For an entree that looks and tastes spectacular, BBQ prawns with macadamia dukkah and mint lemon yoghurt is sure to please. Prepare the macadamia dukkah (this can be done the day before), then roll skewered prawns through the dukkah and grill over medium heat. Combine yoghurt, mint leaves and lemon juice and drizzle over the cooked prawns.

Main 

For an impressive main course, it’s our sticky beef ribs with macadamia bulgogi sauce. This spectacular dish uses macadamias every stage of the way. The bulgogi sauce is a twist on a Korean classic, and is used for both coating the ribs as they cook and for dipping at the table. For an accompanying salad, use any crisp salad leaves, herbs and vegetables, topped with macadamia oil and lime dressing.

Dessert 

Dad will adore our delectable, caramel macadamia tart for dessert. The tart’s base features macadamias, giving it a rich and buttery taste, and the caramel macadamia filling is very simple to make. And the best part? The tart serves eight to ten people, so dad can have seconds.

A gift for dad 

For a healthy snack dad can enjoy later, prepare a batch of our rosemary and sea salt macadamias as a special homemade Father’s Day present. Simply combine two cups of unsalted macadamias with salt, rosemary leaves and macadamia oil, and bake for ten minutes in the oven. Let the nuts cool and then package in cellophane. It will be a wonderful reminder of a memorable lunch.
