This delicious and healthy no bake recipe makes tasty go anywhere bars that will keep you going until mealtime. Perfect for grown up lunch boxes or weekend outings.
- 200 g macadamia nuts
- 30 g pumpkin seeds
- 80 g oligosaccharide (or rice syrup)
- 30 g sugar
- 30 ml water
- 50 g oats
- 30 g dried cranberries
- 5 g chia seeds
- Stir fry the macadamias and pumpkin seeds in a dry pan until any moisture disappears.
- Put the oligosaccharide (or rice syrup), sugar and water in a saucepan and bring to the boil, then reduce the heat to low. Add the macadamias, pumpkin seeds, oats, dried cranberries and chia seeds and mix quickly.
- Line a baking tray with baking paper and press the mixed ingredients into the tray and place in the refrigerator for 30 minutes to 1 hour to harden. Once firm cut into bar shapes.
