Macadamia and seed nut bars

This delicious and healthy no bake recipe makes tasty go anywhere bars that will keep you going until mealtime. Perfect for grown up lunch boxes or weekend outings.

  • 200 g macadamia nuts
  • 30 g pumpkin seeds
  • 80 g oligosaccharide (or rice syrup)
  • 30 g sugar
  • 30 ml water
  • 50 g oats
  • 30 g dried cranberries
  • 5 g chia seeds


  • Stir fry the macadamias and pumpkin seeds in a dry pan until any moisture disappears.
  • Put the oligosaccharide (or rice syrup), sugar and water in a saucepan and bring to the boil, then reduce the heat to low. Add the macadamias, pumpkin seeds, oats, dried cranberries and chia seeds and mix quickly.
  • Line a baking tray with baking paper and press the mixed ingredients into the tray and place in the refrigerator for 30 minutes to 1 hour to harden. Once firm cut into bar shapes.
