Macadamia Pina Colada

macadamia pina colada

Nothings screams ‘holiday!’ quite like an umbrella drink. And with its irresistibly creamy, tropical flavour, the pina colada has stood the test of time. This macadamia version is vegan and dairy free, and the taste is simply sublime. Cheers!

INGREDIENTS

1 cup macadamia milk*
½ cup coconut milk
1 cup pineapple juice
2 tablespoons palm sugar
½ cup Malibu rum
1 cup crushed ice
crushed ice, extra to serve

METHOD

Place all ingredients in a drink blender, except for extra ice to serve and blend until smooth.

Pour into a cocktail glass over the extra crushed ice. Serve immediately.

TIP: For a macadamia Pina Colada mocktail leave out the Malibu rum.

*Macadamia milk is available at some specialty stores, supermarkets or it is easy to make your own, see the recipe here.
