Macadamia green goddess dressing

Loaded with macadamias and fresh herbs, this dressing is super simple to prepare and an easy way to add a splash of vibrant colour and flavour to big bowls of veggies. This recipe make around 3/4 cup.

Ingredients
  

  • 1/2 cup macadamias
  • 3 tbsp tahini
  • 2 tbsp lime juice
  • 1 cup mixed coriander, parsley and mint leaves
  • 2-3 tbsp water

Instructions
 

  • Place all the ingredients, except the water, in the bowl of a food processor and process until smooth. Add enough water to create a dressing with a pouring consistency. Season to taste with salt and add more lime juice or tahini if desired.
  • Serve with a colourful roasted, pickled and raw vegetable salad, and a side of brown rice if desired.
