Macadamia green goddess dressing

Loaded with macadamias and fresh herbs, this dressing is super simple to prepare and an easy way to add a splash of vibrant colour and flavour to big bowls of veggies. This recipe make around 3/4 cup.


½ cup macadamias

3 tablespoons tahini

2 tablespoons lime juice

1 cup mixed coriander, parsley and mint leaves

2-3 tablespoons water

Place all the ingredients, except the water, in the bowl of a food processor and process until smooth. Add enough water to create a dressing with a pouring consistency. Season to taste with salt and add more lime juice or tahini if desired.

Serve with a colourful roasted, pickled and raw vegetable salad, and a side of brown rice if desired.
