macadamia, cranberry and coconut slice

Save money and make your own muesli bars for the child's lunch boxes.

3 cups toasted muesli
½ cup plain flour
¼ cup dried cranberries
½ cup chopped raw macadamias
¼ cup shredded coconut
⅓ cup brown sugar
½ cup honey
80g butter


Preheat oven to 180C (fan forced). Line a greased baking tin with baking paper. Mix the muesli, flour, cranberries, macadamias and coconut in a large bowl. Combine sugar, honey and butter in a saucepan and melt over a medium heat until sugar is dissolved. Pour in the dry mixture and combine. Pour mixture into prepared tin and press gently until firm. Bake for 25 min or until golden brown. It will become firmer when it cools. Slice and store in an air tight container.
