Macadamia baba ganoush

Baba ganoush is a delicious Middle Eastern eggplant dip with a signature smoky flavour. The addition of roasted macadamias takes this baba ganoush to new heights – watch it disappear within moments of serving!

Ingredients
  

  • 1 eggplant large
  • 1/2 cup macadamias
  • 1 clove garlic grated
  • zest of 1 lemon
  • 1 lemon
  • 2 tbsp lemon juice

Instructions
 

  • Preheat BBQ to 200°C. Place eggplant on the grill, cover with BBQ lid and cook, turning occasionally, for 20- 30 minutes, until flesh is soft and skin blistered. Remove from BBQ and cool before halving with a knife and scooping out the flesh. 
  • Place in a food processor and add remaining ingredients. Process until just smooth. 

Notes

You can serve with our macadamia and herb falafels (see recipe here) plus yogurt sauce, chopped tomatoes, cucumber, salad leaves and warm tortilla or pita bread.
