We took a macadamia moment with founders Pam and Martin Brook as they celebrate 20 years of Brookfarm.<\/strong><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>What\u2019s the one ingredient you can\u2019t live without?&nbsp;<\/strong><\/h3>\n\n\n\n<p>Martin: Macadamias. We eat them seven days a week. Some people give up eating their own product after a while, but not us!<\/p>\n\n\n\n<p>Pam: Macadamia oil for all my cooking<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Do you remember when you first tried a macadamia nut?<\/strong><\/h3>\n\n\n\n<p>Pam: I would have been quite young, when they were first commercially available in Australia.<\/p>\n\n\n\n<p>Martin: I didn\u2019t grow up in Australia, so I really only started my love affair with macadamias when I moved up here. Then I got seriously addicted very swiftly.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>What\u2019s your favourite way to enjoy macadamias?<\/strong>&nbsp;<\/h3>\n\n\n\n<p>Pam: There are so many! I put them in my breakfast because the fats help keep you full. I love them in salads and in baking. If we\u2019ve got friends coming over, the Brookfarm \u2018posh nuts\u2019 come out \u2013 that\u2019s what we affectionately call our Premium Oven Roasted Whole Macadamias with Saltbush.<\/p>\n\n\n\n<p>Martin: For me it\u2019s the saltbush macadamias too. I\u2019ll have them with Brookie\u2019s \u2018Slow\u2019 Davidson Plum Gin. Macadamias go so well with our gins and macadamia liqueur.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>What do you like to cook at home?&nbsp;<\/strong><\/h3>\n\n\n\n<p>Pam: Vietnamese chicken salad \u2013 easy, fresh, healthy \u2013 with a sprinkle of lemon myrtle infused macadamias.&nbsp;<\/p>\n\n\n\n<p>Martin: My cooking skills are limited, but I do love to cook Indian food using macadamia oil. There\u2019s something about using that rather than the traditional ghee that is like the icing on the cake.&nbsp;&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>What\u2019s your favourite non-work thing to do right now?<\/strong>&nbsp;<\/h3>\n\n\n\n<p>Martin: Spending time in our rainforest.<\/p>\n\n\n\n<p>Pam: Normally I\u2019d say skiing, but I can\u2019t do that right now. I love to cook with family. And I just joined the Rural Fire Service and I\u2019m loving that. It\u2019s such a great community endeavour.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>If you were an ice cream what flavour would you be?&nbsp;<\/strong><\/h3>\n\n\n\n<p>Martin: Salted caramel and macadamia.
