Macadamia ice cream
We challenge you to find a better ice cream than this! The delicious, creamy texture with the crunch of roasted macadamias is a sublime combination that’s perfect in a bowl, in a cone or served with your favourite pie, flan or brownie. Yum!

  • 150 g raw macadamias roughly chopped into large pieces
  • 600 ml cream
  • 2 egg yolks
  • 1/3 cup caster sugar
  • 1/3 cup golden syrup
  • 1 tbsp brandy
  • 1/2 tsp cinnamon


  • Toast macadamias in the oven till just golden. Cool.
  • Make a custard sauce by stirring together over medium heat the cream, egg yolks and sugar. Continue stirring till just thickened and immediately pour through a strainer to cease cooking. Do not let it boil, as it will curdle. Stir in the remaining ingredients while still warm, then allow to cool thoroughly. Pour into an ice cream machine and churn until set. Mid way through churning, add the toasted macadamias.
