Macadamia ice cream
We challenge you to find a better macadamia ice cream than this one! The delicious, creamy texture with the crunch of roasted macadamias is a sublime combination that’s perfect in a bowl, in a cone or served with your favourite pie, flan or brownie. Yum!

Ingredients
  

  • 150 g macadamias roughly chopped into large pieces
  • 600 ml cream
  • 2 egg yolks
  • 1/3 cup caster sugar
  • 1/3 cup golden syrup
  • 1 tbsp brandy
  • 1/2 tsp cinnamon

Instructions
 

  • Preheat oven to 180°C and toast macadamias in the oven till just golden. Cool.
  • Make a custard sauce by stirring together the cream, egg yolks and sugar in a saucepan over a medium heat. Continue stirring until just thickened and then immediately pour through a strainer into a bowl to cease cooking. Do not let it boil or it will curdle. Stir in the remaining ingredients, except the macadamias, while still warm, then allow to cool thoroughly. Pour into an ice cream machine and churn until set. Mid way through churning, add the toasted macadamias.
