Watermelon and macadamia salad

Ingredients
  

Dressing

  • 1 1/2 tbsp macadamia oil
  • 1 tbsp lime juice
  • 1/4 tsp salt or to taste
  • Black pepper freshly ground

Salad

  • 1/2 watermelon skin removed and cut into 1cm thick triangular pieces
  • 80g feta cheese crumbled
  • 1/2 cup mint leaves whole
  • 1/2 small red onion finely sliced
  • 1/4 cup macadamia halves roasted

Instructions
 

  • For the dressing, combine all ingredients in a small bowl and whisk to combine.
  • For the salad, place all ingredients in a bowl and pour the dressing over the salad. Gently toss to combine.
