Macadamia and white chocolate self saucing puddings

MACADAMIA AND WHITE CHOCOLATE SELF SAUCING PUDDINGS

Try these warm, sweet puddings one cold winter's night.

INGREDIENTS

1 ½ cups self raising flour
¾ cup brown sugar
¾ cup milk
½ cup raw macadamias, chopped
½ cup white chocolate buttons
50g unsalted butter, melted
1 cup boiling water
½ cup brown sugar
45g butter, chopped

METHOD

Preheat oven to 200˚C.  

Combine self raising flour, brown sugar, milk, macadamias, white chocolate and butter in a bowl and pour into 6 lightly greased 1 cup ramekin dishes.

Combine boiling water, brown sugar and chopped butter in a jug and whisk until smooth.  Gently pour over the batter in the ramekins and bake for 35-40 minutes or until puddings are just set.

Serving suggestion:  Serve with vanilla ice cream
