Spoons ready, it's time for some soup!

Cold winter nights call for meals that are warm and comforting, and one of the healthiest winter meal options is a hearty and delicious soup. The versatility and rich flavour of macadamias make the native nuts a natural when it comes to appearing in soups – providing both texture and flavour. Here are some of our favourite winter soup recipes, plus a recipe for macadamia damper, the perfect soup accompaniment.

Roasted Beetroot Soup with Soured Macadamia Cream

Beetroot shines in this delicious winter soup. Top with soured macadamia cream for a dish that is hearty, filling and bursting with flavour. After baking the beetroot for 40 minutes, cool and chop, then combine with onions and stock and top with roasted macadamias. The soured macadamia cream will add a zesty and delicious flavour to the soup.

Chicken and Macadamia Hot and Sour Noodle Soup

This spicy hot and sour soup combines the wonderfully restorative ingredients of garlic, ginger, chilli, Chinese mushrooms and macadamias. Delightful, chewy Hokkien noodles sit in the broth alongside chicken breasts which are marinated in macadamia oil, soy sauce and Chinese cooking wine. Top with crushed macadamia nuts and you've got east meets west in the most delicious way possible.

A winter favourite is brought up to date with the addition of a spicy, macadamia chilli jam. A simple-to-make mixture of onion, capsicum, chillies, garlic, ginger, fish sauce, sugar, lime juice and macadamias, the chill jam really livens up this classic chicken noodle soup. Featuring chicken breasts, bok choy, mushrooms and egg noodles (be sure to use good-quality chicken stock) this restorative broth is simple to make and sure to remedy winter's ills.

Pumpkin and Macadamia Soup

Perfect for a cool winter's night, this recipe from our friends at Nutworks is a weeknight wonder bursting with flavour. Sauté macadamias, onion and ginger until golden brown, then add three cups of diced pumpkin and a chopped apple. Pour over chicken stock and simmer, then blend until smooth and creamy. Top with a swirl of yoghurt and some roughly chopped macadamias.

Macadamia Nut Soup

This potato and leek soup has such a short list of ingredients – unsalted macadamias, potatoes, a leek, an onion, chicken stock and cream – that it is guaranteed to be a popular mid-week dinner option. After simmering the potatoes, leek, onion and stock in a large saucepan, add the macadamias and blend in batches until smooth. Stir in the cream, season with salt and pepper and serve with toasted baguettes.
